carmen
gastronomic tale in 6 acts

Starting at Sant Jordi the gastronomic menu inspired in the femenine character that become a myth
Carmen was written by Prosper Mérimée in the XIX Century. He idealized her, Georges Bizet musicalized her and time and multiple interpretations turned her complex, out-of-time character into a myth.
Ours is also an interpretation, gastronomic in this case. She has inspired a menu of five dishes and one dessert that collect the essences of Seville, the nights at Triana, the bandits appetites and the freedom of the "yerbabuena" (mint) grown at the sides of the hiden Andalusian paths.
1.- Presentations. Mechá / tupí de Idiazábal ahumado
2.- Razors and castañuelas. Escabeche / cítricos
3.- Triana's bridge appart. Fritada / bacalao / naranja amarga
4.- "We were not born to grow cabbagges". Berza jerezana
5.- Acometida. Caldereta de toro de lidia / puré albero
Desssert: Freedom. Poleà / fresones / azahar / yerbabuena
The menu is abailable from April 23rd, on the restaurant schedulles.
Price per person, beberage no included, 39€. The menu will be served to all the people in the table.
